What is Black Rice?

Black Rice, formerly known as forbidden rice or emperor’s rice, belongs to the Oryza, Sativa L. Species.

During ancient times in China, Black rice was considered so nourishing, wholesome, and strengthening that it was forbidden to be consumed by the villagers and reserved for the royal and elite families.

It usually has a deep black color which changes to purple when cooked because of the anthocyanin content. (Anthocyanin is a flavonoid in different food groups that gives them a red, purple, or blue pigment.
