Sheer Khurma Recipe (Muslim Style Sheer Khurma)


Rich and creamy Sheer Khurma is a Mughlai dessert made with vermicelli, milk, nuts, and dates. It is widely made to celebrate the festival of Eid.

Someone rightly said food could be genuinely nostalgic, especially the smell; it sparks the past fond memories in our brains.

Sheer khurma is one dessert that always teleports me to my childhood days.

I have such happy memories of having this dessert as a kid.

Every year during eid, our lovely Muslim neighbors would share this delicious dessert with us, and I remember having it as my breakfast because I just couldn’t resist the excellent taste and flavor.

I wanted to get you the same aromatic taste of sheer khurma that I savored in my childhood; hence, this recipe is shared by one of my closest Muslim friends, and it tastes no less than perfection.

What is Sheer Khurma?

Sheer khurma is a traditional Mughlai dessert prepared during festivals like Eid-Ul fitr in Pakistan, India, Bangladesh, Afghanistan, and Malaysia.

Due to the high nutrient quantity in this dessert, it is served as breakfast after the eid prayers to family and friends to celebrate the joyous occasion.

Sheer khurma is an easy dessert made by combining thin vermicelli, nuts, dates, ghee, milk, and sugar.

The word “sheer khurma” is derived from Persia, where Sheer means “Milk” and khurma means “Dates.”

Tips to Make the Best Sheer khurma

1. Whole Wheat Vermicelli- To make the authentic sheer khurma, you need the thin whole wheat vermicelli, and this recipe uses less vermicelli to make it milkier.

(You need to be careful with the amount of vermicelli as it expands after cooking, so add it according to your liking. I like my sheer khurma to be more of a milky consistency.

2. Addition of dry fruits- Dry fruits like dates and raisins are naturally sweetened. Hence adjust the sugar quantity accordingly.

3. Blanch and peel almonds– If you can spare some time, try to blanch and peel the almonds before chopping, As it increases the taste and nutrition profile of the dish.

4. Dates- Medjool dates complement well in sheer khurma. However, you may add any readily available dates.

5. Cardamom pods- If possible, try using cardamom powder or finely crushed cardamom, not the cardamom pods, as it spoils the taste if you bite onto it.

6. Ghee- Ghee is very important for this dessert. Hence try not to swap this with anything.

7. Slow cooking- Sheer khurma is a dessert that brings out the flavor when cooked on a slow flame.

Cooking Instructions

1. Firstly, blanch and peel the almonds before chopping as it increases the taste and nutrition profile of the dish. Then chop 1/4 cup cashews, 1/4 cup pistachios, 2 tbsp raisins, and three dates.

2. Heat 2 tbsp ghee in a large saucepan, and add the chopped almonds, cashews, pistachios, raisins, and dates. Fry it on low heat until it turns slightly brown and aromatic. (keep stirring the ingredients and remove it to a plate once it’s ready)

3. Add the vermicelli to the same pan and roast until it turns slightly brown (keep stirring until it’s fried well, and Do not leave it unattended as it can burn)

Remove it aside when it is ready.

4. Now add 500ml of full-fat milk to the same saucepan, along with cardamom powder, and cook on slow heat for 2 minutes.

5. Add the dry fruits/ nuts and then the roasted vermicelli to the milk and cook for another 2-3 minutes (On slow flame) till the vermicelli is cooked.

(Do not add sugar at this point. Let the raisin and date cook and leave their sweetness in the milk)

6. Taste the sheer khurma, add sugar accordingly and cook for another minute. Do taste before adding any sweetener. The raisins and dates might have sweetened the sheer khurma already.

7. You may garnish it with saffron strands or rose petals and serve it warm or chilled as per your taste.

Ingredient swap for gluten-free and vegan.

1. Whole Wheat vermicelli can be swapped for thin rice vermicelli if you are gluten-intolerant.

2. Vegans and lactose intolerants can try plant-based milk like soy milk, rice milk, or oat milk. (I have personally tried soy milk, and it tastes good)

Ingredients
  

  • ¼ cup almonds blanched ,peeled and chopped
  • ¼ cup cashews chopped
  • ¼ cup pistachios chopped
  • 3 pieces dates chopped
  • 2 tbsp raisins chopped
  • 2 tbsp ghee
  • 50 grams vermicelli
  • 500 ml full fat milk

Instructions
 

  • Blanch and peel ¼ cup of almonds before cjopping them as it increases the taste and nutrition profile of the dish.
  • Then chop ¼ cup of cashews, ¼ cup of pistachios, 2 tbsp raisins and 3 dates.
  • Heat 2 tbsp ghee in a large saucepan, add the chopped almonds, cashews, pistachios, raisins, dates and fry on low heat until its turns slightly brown and aromatic (remove it aside when its ready).
  • Next, add 50 gm vermicelli to the same pan and roast on slow heat until it turns slightly brown (do not leave it unattanded as it can burn and keep stirring while frying) Remove it on a plate when it is ready.
  • Now add 500 ml of full fat milk to the same saucepan, along with ½ tsp cardamom powder and cook on slow heat for 2 minutes.
  • Add the roasted dry fruits, nuts and vermicelli to the pan and cook for 2-3 minutes until the vermicelli is cooked. (do not add sugar at this point, let the raisins and dates sweeten it first)
  • Now taste the sheer khurma and add sugar accordingly and cook for 1 minutes.
  • Garnish with saffron strands or rose petals and serve it warm or chilled as per your taste.
