What is Sabudana Kheer?

Sabudana kheer is an Indian-style creamy pudding made primarily with milk, sabudana (tapioca pearls), and sweetener.

Sabudana – also known as tapioca pearls, is made from the cassava plant’s tapioca roots.
And Kheer- is an Indian-style pudding.

Sabudana is also known as Sago in many Asian countries.

It is widely cooked in India during the fasting season of Navratri, and It is used to break the fast (vrat) as it is high in carbohydrates and helps provide a quick boost of energy. However, one should use it in moderation as it is pretty low in other nutrients and minerals needed for the body.

Sabudana is naturally gluten-free and easily fits a vegan diet by simply switching the whole fat milk to coconut milk or rice milk.

Sabudana can be used to make various Indian dishes like Sabudana khichdisabudana vada, and kheer. It is pretty light and easy to digest, hence can also be given to toddlers and kids for a quick energy boost.

They are also known to reduce body heat efficiently, making for a wonderful dessert during those hot summer days.

Ingredients for Sabudana Kheer

  • 1/4 cup Sabudana (Tapioca pearls)
  • Sugar or any sweetener as per taste
  • 1 cup water
  • 1 cup milk (add more if you want a thinner consistency)
  • a pinch of cardamom powder or one pod of cardamom
  • 1 tbsp chopped nuts as per your choice.

Tips to make Sabudana Kheer

1. Do not leave the sabudana unattended. Keep stirring the sabudana at intervals during the cooking process, or else it tends to stick to the bottom of the pan.

2. Sabudana kheer usually thickens even more upon cooling; hence add milk as per the consistency you like.

3. You may substitute sugar with palm sugar or dates for a healthier alternative.

4. You may soak sabudana for 30 minutes before cooking as soaking efficiently reduces the cooking time.

Cooking Instructions

1. Take 1/4 cup of sabudana in a pot and rinse it well.

2. Pour 1 cup of water into the same pot and cook on medium flame until the sabudana turns transparent. (Keep stirring the sabudana or else it might stick to the bottom of the pan)

3. Add milk and one cardamom pod once the sabudana is cooked and seems translucent. Stir and cook until it turns a little thick (keep stirring in intervals)

4. Add sweetener once it’s thick, cook for a few seconds, and then turn off the flame.

5. Garnish with chopped nuts and serve it warm or chilled.
