Kanda bhaji Recipe (Onion Fritters Recipe)


Kanda bhaji is a deep-fried onion fritter made primarily with onions and gram flour (besan). The step-by-step pictures will teach you to make these easy onion fritters with minimum effort.

Well, it is a perfect monsoon snack, pair that with a cup of tea, and it’s a smash hit.

It has different names in different states. The north Indians call it “Pakoras,” and the south Indians call it “Bajji.”

The onion fritters recipe mentioned here is a pure Maharashtrian style that is flavorful and delectable.

How to Make Kanda Bhaji?

First, prepare the Bhaji Mixture

1. Add the following ingredients to a deep bowl. 

(01 large) thinly sliced onion, (03) green chilies finely chopped, ½ tsp turmeric, ½ tsp ajwain (carom seeds), ½ cup besan (Gram flour), ½ tsp oil, ½ tsp baking soda (sodium bicarbonate), and ½ tsp salt.

Mix it gently and let the mixture rest for 5 minutes. Try not to add water, as the onions will release moisture.

2. After 5 minutes, the mixture should look like this. If your mixture still looks too dry, you may sprinkle some water and mix thoroughly.

Bhaji Frying

1. Heat oil in a deep frying pan or a Kadai.

(Test whether the oil is hot enough by putting a small amount of batter in the oil. If it rises steadily, then you are good to go.

Make sure you fry all the bhajis on medium heat as high heat would burn them.

2. Make small size bhajis while frying, as they are quick to cook. (flip and fry both sides until you see a deep golden color on both sides.

3. Once done frying, use a strainer spoon or a slotted spoon to remove the fried bhaji and place it on an absorbent paper towel. ( the absorbent paper towel helps remove any excess oil from the bhajis)

4. You may serve them with tomato ketchup, green mint chutney, and a cup of hot masala chai.

Ingredients
  

  • 1 large onion sliced
  • 3 green chilies
  • ½ tsp turmeric
  • ½ tsp ajwain carom seeds
  • ½ cup besan gram flour
  • ½ tsp oil
  • ½ tsp baking soda
  • ½ tsp salt
  • oil for deep frying

Instructions
 

Kanda Bhaji Mixture

  • Add 1 sliced onion, 3 green chilies, ½ tsp turmeric, ½ tsp ajwain (carom seeds), ½ cup besan (gram flour), ½ tsp oil, ½ tsp baking soda (sodium bicarbonate) and ½ tsp salt. Mix it gently and let the mixture rest for 5 minutes. (the onions will release some moisture so its important to let the batter rest for 5 minutes)

Kanda Bhaji Frying

  • Heat oil in a deep frying pan on medium heat.
  • Drop a tiny size batter to check if the oil is hot, if the batter rises steadily you may proceed frying the bhajis.
  • Using a spoon, drop tiny size bhajis in the deep frying pan.
  • Flip and fry them from all sides until they turn golden brown.
  • Using a slotted spoon remove the bhaji on a tissue-lined plate to absorb the excess oil.
  • Repeat the same procedure until all the bhajis are fried.
  • Enjoy hot kanda bhajis with masala chai.
