Bombay Veg Cheese Sandwich Recipe


Veg Cheese Toast Sandwich (Bombay Style) is one of the most popular street food in India.

It is made with several veggies like potatoes, capsicum, beetroot, onion, and tomato and layered with a generous amount of cheese, butter, and green chutney.

Veg Cheese Toast sandwich makes up for a quick breakfast, brunch, or an evening snack.

It is super simple, healthy, and can be made in minutes.

Today I am going to share the recipe for an authentic street style Veg Cheese Toast Sandwich which is loved and savored by many Indians.

I have used a basic sandwich toaster that is used by most street-side vendors to make the toasted sandwich.

However, you may use a griller or a regular pan if you do not have a toaster available.

Tips to make yummy Bombay Veg Toast Sandwich

1. Mint-coriander Chutney– Mint coriander chutney helps enhance the flavor of this sandwich, hence try not to skip it.

2. Bread– I prefer using multigrain bread, However, you may choose white bread, brown bread, wheat bread, or sourdough as per your requirement.

3. Prepping ahead of time– You may prepare the chutney a day in advance as well as boil the potatoes and refrigerate them without peeling. This helps you to put it together real quick.

Cooking Instructions

Making Mint-Coriander Chutney

1. To a blender add 1 cup chopped cilantro, a handful of mint leaves, 3 garlic cloves, 2 small green chilies, 1/2 tsp cumin powder, 1/4 tsp black salt, and 2 tbsp lemon juice (Add a little water as and when needed while blending)

2. Blend to a smooth paste and keep it aside.

Preparing Veggies for the Sandwich

1. Firstly, Boil the potatoes and beetroot in a cooker with 02 cups of water. Just boil it for 1-2 whistles (make sure the beet and potatoes are cooked just nice and do not overcook otherwise it will be mushy)

2. Rinse, peel, and slice the onion, tomatoes, capsicum, and cucumber in thin round slices.

Preparing Sandwich

1. Spread butter evenly on the bread slice, then spread green chutney on it.

2. Now, place two slices of potato on the bread and sprinkle cumin powder and chaat masala.

3. Then, place all the remaining veggies and sprinkle some more chaat masala, cumin powder, and black salt.

4. Lastly, add a slice of cheese and cover it with another piece of bread and place it in the toaster.

5. Toast on medium heat for 2-3 minutes, then flip and toast the other side until the bread is golden brown.

6. Once it’s toasted well, spread a little butter on top of the sandwich then remove it to a plate and cut it into two portions. Serve hot with tomato ketchup or green chutney.

Ingredients
  

Mint-Coriander Chutney

  • 1 cup chopped cilantro/coriander
  • handful of mint leaves
  • 3 garlic cloves peeled
  • 2 green chillies
  • 2 tbsp lemon juice
  • ½ tsp cumin powder
  • ¼ tsp black salt
  • Water (if needed) optional

Veggies For Sandwich

  • 1 Beetroot Thin round Slice
  • 1 Potato Thin round Slice
  • 1 Onion Thin round Slice
  • 1 Cucumber Thin round Slice
  • 1 Capsicum (Green bell pepper) Thin round Slice
  • 1 Tomato Thin round Slice

Instructions
 

Making Mint-Coriander Chutney

  • Lastly, add a slice of cheese and cover it with another piece of bread and place it in the toaster.
  • Toast on medium heat for 2-3 minutes, then flip and toast the other side until the bread is golden brown.
  • Once it's toasted well, spread a little butter on top of the sandwich then remove it on a plate and cut it into two portions.
  • Serve hot with tomato ketchup or green chutney.
