Ragi and Banana Cake in Rice Cooker (Gluten-Free)


This Gluten-free Ragi and Banana cake has become my family’s favorite tea-time snack as it is so delicious and goes very well with afternoon tea.

I try to make this healthy gluten-free ragi and banana cake at least once a month, as ragi provides a host of nutrients and minerals for overall health and well-being.

I am a proud supporter of all millets as they are a powerhouse of nutrition and are easily accessible at a minimal cost.

Did you know ragi is a fantastic source of calcium for growing kids, toddlers, vegans, and even for all of us? Because as we grow, our bone density gets low, and this humble crop helps us maintain good bone health.

Not only that, but this powerhouse millet is also gluten-free.

Ingredients for Ragi and Banana Cake

1 cup ragi flour

½ cup instant oats

1 tsp baking powder

½ tsp baking soda

½ tsp pink salt

3 bananas

1 egg

10 dates

½ cup walnuts

2 tbsp coconut oil

Cooking Instructions

1. In a large bowl, add 1 cup ragi flour, ½ cup instant oats, ½ tsp baking soda, ½ tsp pink salt, and 1 tsp baking powder, and mix it well.

2. Next, To a blender, add three bananas, 6 de-seeded dates, 1 egg, 2 tbsp coconut oil, and blend to a smooth paste.

3. Add the banana mix into the flour and mix it well.

4. Add ½ cup chopped walnuts and 4 chopped dates, and mix well.

5. Grease the rice cooker with butter or coconut oil, pour the cake batter, and set the rice cooker to cook.

You will have to push the button down 2-3 times until the cake is fully cooked.

6. Cook until a toothpick inserted into the cake comes out clean. It should take no more than 20 minutes.

7. Slice and serve with afternoon tea.

Ingredients
  

  • 1 cup ragi flour
  • ½ cup instant oats
  • ½ tsp baking soda
  • ½ tsp pink salt or table salt/ kosher salt
  • 1 tsp baking powder
  • 3 ripe bananas
  • 1 egg or 2 tbsp ground flax.
  • 6 deseeded dates
  • 4 deseeded dates chopped
  • ½ cup walnuts chopped
  • 2 tbsp coconut oil

Instructions
 

  • In a bowl, add 1 cup ragi flour, ½ cup instant oats, ½ tsp baking soda, ½ tsp pink salt, 1 tsp baking powder and mix together.
  • Next, to a blender add 3 bananas, 1 egg, 6 desseded dates, 2 tbsp coconut oil and blend.
  • Pour the banana mixture into the flour and combine the batter well.
  • Add ½ cup chopped walnuts, 4 chopped dates and mix
  • Grease the rice cooker with butter or coconut oil, Pour the cake batter and set the rice cooker to cook.
    You will have to push the button down 2-3 times until the cake is fully cooked.
  • Cook until the toothpick inserted in the cake comes out clean. It should take no more than 20 minutes.
  • Slice and serve with afternoon tea.

Notes

1. After pouring the cake into the rice cooker bowl, let it cook undisturbed. If you keep opening the rice cooker the heat will be passed out, just the same way when you are cooking a cake in the oven.
2. My rice cooker has 2 functions, rice cook, and keep warm. I had to set it to cook thrice until it was fully cooked, It should not take more than 20-25 minutes for the entire process.
3. If you have a nonstick rice cooker bowl, you do not need to grease the bowl.
